Little Mushroom Corn Pudding
Addition #2 from my Under the Mushroom cookbook. I have been on a hunt for a good corn pudding that resembled what I had at Cotton Patch restaurant years ago in Plainview. This comes close to it. Great dish for a take along to a shared dinner or for a holiday meal.
2 16-oz cans cream-style corn
1 stick butter, melted
1 T flour
2 T sugar
1/2 tsp salt
2 T pimentos, chopped
6 eggs
In a large bowl combine all the ingredients. Transfer to a lightly greased baking dish. Bake at 350 degrees for 45 minutes or until set.
